Nishio's mineral-rich soil and morning fog produce a matcha with unusual clarity. Samidori is the most demanding cultivar to grow — slow, low-yield — and rewards the patience with a clean, almost glass-like sweetness.

Grown by a co-op of seven families along the Yahagi river. The Nishio region produces only a fraction of Japan's matcha, but its tea is poured at imperial ceremonies and Zen temples across Honshu.

Whisk vigorously until foam is fine and uniform. Serve in a warmed chawan.
